Weekend Recipes: "Diet" Ice Cream

Christmas reminds me of lots of things, like spending time with family, eating lots of good food, celebrating, relaxing and I also love giving gifts to family and friends! It also reminds me of things like cinnamon, nutmeg, the sweet smell of fruit and cookies, candles, fairy lights and a little family favorite: Mum's Christmas Diet Ice Cream! The version I'm sharing has a few different things to what she would include, but that is the great thing about a recipe like this: you can add anything you want!

The key word in this title is DIET, because it's literally the exact opposite! This is a bundle of glorious calorie-filled goodness. Warning: It will have you growing an addiction that will make your pants sit a little tighter. But, it's Christmas time, so who cares! Eat as much as you want and don't care about the calories! Life is too short to skip dessert, and you can't be the one at the table eating just a salad :P

Enjoy this ice cream! You can try my version or you can add your own things! The main thing is to have lots of fun making it, and you can always get your kids helping out too!

"Diet" Ice Cream

1L vanilla ice cream

1 tin condensed milk

2 Mars bars, chopped

2 Flakes, crumbled

1 box Smarties

75g each of slivered almonds and chopped pecans

Crushed Oreos

Allow the ice cream container to sit on the counter so the ice cream softens and transfer it to a bowl. Add all the ingredients and mix it together.

Put as much as you can back into the ice cream container. Pour any remaining ice cream into a smaller freezer-safe container or pour it into popsicle moulds. Freeze the ice cream for a few hours and enjoy with some fruit salad if you so desire.
