Weekend Recipes: Christmas Morning Muffins

Happy weekend everyone!
I'm writing this on Sunday, instead of Saturday, but I've managed to change the date so it shows up as yesterday's date. Sneaky!
Because it's the weekend, it's time for the recipe posts! I will also be posting a recipe for today (Sunday).
And because it's December, the recipes will be Christmas related!
Anway, enough rambling. Let's get into Saturday's recipe.

This is my absolute favorite muffin recipe! It's so moist and it's pretty much a no fail recipe!
I came across this on Pinterest. If you're not a big fan of fruitcake this is a great alternative. It doesn't have all the fruit peel. You can put the dried cranberries in or you can leave them out and they'll still be delicious! Even better, you can throw the batter into a cake tin and make a cake instead of muffins. These muffins are great on their own, or you can cut them in half and spread a little butter on them. Seriously so delicious and so simple! Hope you enjoy them as much as I do!
Christmas Morning Muffins
300g self-raising flour
1 tsp baking powder
2tsp mixed spice
2tsp cinnamon
175g dried fruit of your choice (craisins, apricots, dates, etc)
75g pecans, chopped
100g caster sugar
(Mix in a bowl)
Add:
2 eggs
100g melted butter or oil
250-300ml milk (start with 250ml first and see how it mixes)
Bake for 15-20 minutes at 190'C
